Rooted in family tradition and high-caliber culinary mastery, Aiko Street Food—named in honor of Chef Ryan Mateling’s Japanese grandmother, Aiko (“beloved child”)—delivers hyper-flavorful, technique-driven street food.

Chef Ryan brings a formidable pedigree to the line, having cheffed and cooked in top-tier kitchens across the state, including Voyager, Besa, The Cook’s House, Antietam, and Amical. His career has been shaped alongside renowned culinary leaders like Brian Polcyn, John Vermiglio, Pete Peterson, Michael Peterson, and Floyd Roberts.

After launching Aiko as a celebrated pop-up series across Detroit and Traverse City classics—from The Schvitz and Frame to The Little Fleet—Ryan transitioned into a high-demand food truck, eventually co-developing the M-88 Food Court in Bellaire as a year-round community culinary destination.

Today, Ryan is expanding Aiko back to Metro Detroit to be closer to his family, cooking alongside his 15-year-old son, Dylan (a kitchen veteran since age nine). Following this residency, Chef Ryan is set to unveil a brand-new Metro Detroit brick-and-mortar takeout concept in the new year.
